The Next Best Thing To Robert Redford



When my sister made a special request for her birthday dinner last month, I couldn't have been more excited than to hear that she didn't want a cake but this dessert instead. Mom frequently made this when I was a child and it adopted all sorts of nicknames (the girls would call it by its rightful name while the boys would insert the name of a hot supermodel). You can call it whatever you want, except The Next Best Thing To Jude Law (I've taken that one), but just remember that it's a Knight family favorite that will hopefully become one of yours, too!

Mix together and press into a 9"x13" pan:
1 cup flour
1 stick softened butter
1 cup finely chopped pecans
Bake for 15-20 minutes at 350 degrees. Allow to cool.

Beat together:
8 oz. cream cheese
1 cup sugar
Fold in:
1/2 of a 9 oz. carton of Cool Whip. Smooth the mixture onto the cooled crust.

Beat until smooth:
1 large box of chocolate pudding mix
1 large box of vanilla pudding mix
3 cups cold milk
Spread on top of cream cheese mixture.

Top with remaining whipped topping. Cover and refrigerate overnight. Sprinkle with chocolate shavings before serving.

  3. Mom said: RR totally!!! And that is what this recipe was called in the newspaper where I clipped it. Soo thrilled your girls are making it now. Wish I could have been there for the love, festivities and dessert.
